1. Poha:

Poha is a popular and easy-to-make Indian breakfast dish. Rinse flattened rice (poha) in water and set it aside. In a pan, heat oil and add mustard seeds, curry leaves, chopped onions, and green chilies. Sauté until the onions turn translucent. Then, add turmeric powder, salt, and rinsed poha. Mix well and cook for a few minutes until heated through. Garnish with fresh coriander leaves and serve hot.

Upma is a savory dish made with semolina (sooji) and vegetables. Heat oil in a pan and add mustard seeds, urad dal (split black gram), and curry leaves. Sauté until the dal turns golden. Then, add chopped onions, green chilies, and vegetables of your choice (like carrots, peas, or bell peppers). Cook until the vegetables are tender. In a separate pot, roast semolina until lightly golden and then add it to the pan. Stir well, add water, salt, and cook until the upma is thick and fluffy.

Whisk eggs in a bowl and add chopped onions, tomatoes, green chilies, coriander leaves, and a pinch of salt. Mix well. Heat oil in a pan and pour the egg mixture into it. Cook on medium heat until the omelet is set. Flip and cook for a few more minutes until cooked through. Serve hot with toast or bread.
